Introduction
Sorbitan esters made from various fatty acids are ethoxylated to prepare polysorbates. These Ethoxylates have a number of advantages. They are insensitive to electrolytes and pH variations and form micelles at low concentrations giving stable emulsions. They are very mild and can be used in foods also.
